We all know that we should eat more fruit and vegetables. The antioxidants found in them are essential for good health and disease resistance and a lifetime habit of eating an adequate amount every day can help prevent heart disease, some cancers, digestion problems, as well as reducing blood pressure, cholesterol and diabetes and help overcome obesity.

Most Australian adults only eat half the recommended 5 serves of vegetables daily and not enough fruit either. As these are known to be a source of natural antioxidants, particularly vitamins E and C, beta-carotene and minerals such as selenium, copper and zinc, it is essential that we all eat them every day.

The usual accompaniment to any barbeque is a salad – often a leafy green salad, coleslaw or perhaps a tomato salad. We’ve come a long way from the iceberg lettuce with sliced tomatoes and canned beetroot. Today’s salads are innovative and exciting, based on a wide variety of leafy greens and vegetables, dressed with flavours from many parts of the world and including ingredients from all the essential food groups – cereals, breads and grains; meat, poultry and seafood; fruits, seeds and nuts.

And believe it or not you can even make some salads from the bbq! A chicken Caesar salad is easy to prepare – simply bbq some chicken breasts or tenderloins and serve with cos lettuce, boiled eggs, croutons and parmesan cheese topped with a good Caesar dressing.

Or for something different try chicken, mango and almond salad – very popular on the salad bar at Sizzler.

Another favourite is Thai Beef Salad. Simply grill a good quality steak, basting with a sauce made from a red curry paste, lemon grass, coriander and fish sauce. Then slice thinly and serve on wilted spinach or rocket with cashews and a light soy dressing.
