There are some interesting ways of cooking on the Barbeque and one of the most
popular recipes is the Beer Can Chicken. Its easy to cook and stays moist due
to the beer steaming inside, whilst draining away unnecessary fats and imparting
great flavour. This recipe is best cooked on a barbeque with a cover, using
indirect heat.
First of all remove the neck and giblets. Then coat the chicken lightly with
olive oil and season with salt and pepper or any other seasonings you desire.
Preheat the barbie to medium heat. Pour out about Ό of the beer and put the
chicken on top of the can with the legs down so that it appears to be standing
on the surface. Carefully place the can and chicken on the BBQ grill grate
making sure the legs touch the grill to ensure stability. Close the lid and cook
for about 1 to 11/2 hours. Remove the chicken very carefully and let it rest for
about 10 minutes before carving.
For another unusual recipe why not try fired bread. Breads cooked outdoors are
quick and easy. Make basic dough with warm water, yeast, salt and plain flour.
Knead it until it is smooth and place it in a bowl, cover with a cloth and allow
it to rise in a warm spot for about 40-50 minutes. Divide it into pieces and
rollout or leave it in a ball shape. Brush with olive oil and place it oiled
side down on a slow grill or over glowing embers. After one or two minutes turn
it over. You can also use a camp oven for a more traditional loaf.
If using an open fire you can bake bread on a stick. Roll a piece of dough
around a clean and oiled stick and hold it next to the coal coals, turning to
bake until its done.
