Fish cooked on the Barbeque tastes fantastic. Simple fish fillets, with an herb
or butter baste, are extremely easy to cook and are wonderfully healthy for you
as well.
There are a few rules however. Firstly, the fish has to be fresh and should be a
firm variety like barramundi, flathead, blue eye cod, bream etc. It should also
be moist and smell fresh. Fish can be cooked in a variety of ways, but the
biggest mistake people make is overcooking it. Seafood is delicate and
overcooking spoils the flavour and texture. You can bake it in foil, paper or
banana leaves to retain the fishs natural moisture and of course prawns in
their shell can be placed straight onto the barbie.
As for nutritional value, gram for gram, fish is one of the lowest fat, highest
protein foods you can eat. It is low in kilojoules and contains minerals such as
iodine and calcium, and vitamins A, B, E and D essential for maintaining good
health. Fish oils are high in Omega 3 fats, which have positive health benefits
in reducing harmful cholesterol and assisting in preventing heart disease.
