But it’s also about providing food that has been properly prepared. Food can
spoil very quickly when left outdoors for even a short amount of time, so Peter

The first rule to follow is to avoid cross contamination of food. This means
keeping raw meats away for already cooked or ready-to-eat foods, like salads and
dips. A common food handling mistake is putting cooked meat back onto the same
plate when it was raw. This contains raw juices that contain bacteria, so clean
utensils and platters. And never store uncooked and ready to eat food together,
and when transporting to the barbeque make sure they are kept really cold in an
eskie filled with ice.
Temperature control is very important too. Don’t leave food out in the sun and
if you are taking cooked food home make sure it goes in the fridge immediately.
Cook sausages, patties and poultry thoroughly until the juices run clear – a
meat thermometer can remove the guesswork.
